Help with creating worksheets for elementary students

I'm looking to create worksheets from scratch for my elementary students. 

However, I simply don't seem to be able to find the things I need. 

eg. I want to create a blank score write notes names below so they can draw the notes on the stave - how do I do that?

Next, I want to create a score with a time signature and notes, but no barlines so the students can insert the barlines - how do I do that? 

I want to make a variety of different worksheets at this level and try as I might, I find myself extremely limited by the existing functions.

Please help.
